Welcome to episode two! Today’s burger is a freestyle cheeseburger, basically because I had some ‘cheese’ in the fridge and some pinto beans I had soaked and didn’t know what to with! So I threw together this recipe on pure intuition – and it turned out great! Plus, for those new vegans or transitioning vegans I’ve been talking to, this is a great way to try out vegan cheese. If you melt it a little on the cooking patty, you’ll see – it is so yummy! For episode one, click here.
Makes: Depending on size of patty. I made my quite flat and this mixture would probably make about 8 like that.
- 2 Cups cooked pinto beans
- 1½ cups TVP
- 1 vegetable stock tube
- 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, set aside for 5 minutes)
- 3 tablespoons cornmeal/polenta
- 1/2 cup flour
- 1/2 cup oats
- 1/2 cup breadcrumbs
- 2 teaspoons each of garlic powder, onion powder
- 1 tablespoon dried herbs
- Salt and pepper
- 2 tablespoons soy sauce
- A big bunch of fresh chives
- 1 tablespoon tomato paste/puree
- Burger buns, tomato, lettuce, pickles and vegan cheese slices
Pre-heat oven to 375/190/gas mark 5. Place TVP and stock cube in a medium bowl and cover with very hot water. Process beans in a food processor until broken down but not totally smooth. In a large bowl place beans, cornmeal, flour, breadcrumbs and oats. In an oven-proof frying pan heat some oil and add the TVP mixture and add a little more water if it has all been absorbed. Add to this the garlic and onion powder, salt and pepper, dried herbs, soy sauce, chopped fresh chives and tomato paste. Stir and cook for 8 – 10 minutes. Allow to cool a little.
Now add this to the beans and flour mixture with the flax egg and combine well. It should be a moist but sticky texture and should easily form into patties. Make them as big or small as you like!
Rinse out the frying pan you used and heat a little oil in it again over medium heat. Add in the patties but do not crowd the pan. Brown on both sides (be careful when flipping) for about 4 – 5 minutes on each side. Now place pan in the oven and bake for a further 10 minutes, checking regularly. Place a slice of cheese on each patty 1 minute before taking out so it melts a little 🙂 Now assemble!
I used tofutti cheese slices, pickles, tomato and lettuce. You can use what you like! I hope you enjoyed today’s episode!
